Pumpkin Spice & Everything Nice

22709420_1729213264051209_6945216276616708096_nI pretty much love pumpkin everything which is one of the many reasons as to why I love fall so much. Fall is all about pumpkin spice… cookies, cupcakes, pies, lattes, and muffins! These crunchy, seedy, sweet, and nutritious muffins were inspired by the flavours and colours of fall.

Pumpkin Spice Muffin Recipe

Ingredients:

  • 1 Cup Brown Rice Flour
  • 1 Cup Chickpea Flour
  • 1 Cup Pumpkin Pure
  • ½ Cup Melted Coconut Oil or Apple Sauce
  • ½ Cup Coconut Mylk
  • ½ Cup Coconut Sugar
  • 2 Tbsp Maple Syrup
  • 2 Tsp Baking Powder
  • 1 Tsp Baking Soda
  • ¼ Cup Chopped Pepitas/ Pumpkin Seeds
  • ¼ Cup Chocolate Chips
  • ½ Tsp Ginger
  • ¼ Tsp Tumeric
  • 1/2 Tsp Clove
  • 1 Tsp Raw Cocoa
  • 1 1/2 Tsp Cinnamon
  • ½ Tsp Nutmeg
  • 1/2 Cup Salted Pumpkin Seeds to top

Directions:

  1. Preheat oven to 350 Degrees
  2. Add in all ingredients to a large mixing bowl
  3. Stir evenly and break down all lumps (the batter should be quite liquidy)
  4. Pour into muffin moulds (should make about 12)
  5. Top each muffin with a handful of pumpkin seeds
  6. Bake for 25-30 minutes
  7. Let sit for 15 minutes
  8. Enjoy 🙂
