The Best Pancake Topping is More Pancakes

Pancake Sundays have turned into Pancake Mondays for us, because it is our only day off! Pancakes are delicious no matter what day :). This Monday we made Quinoa Pink Pitaya Pancakes and they were very yummy.

Ps. the texture of quinoa flour is not for everyone so feel free to switch the base up.

Quinoa Pink Pitaya Pancake Recipe




  • 2 Cups Quinoa Flour
  • 2 Cups Coconut Mylk
  • 2 Tbsp Apple Sauce
  • 1/2 Tsp Baking Soda
  • 2 Tsp Vanilla
  • 1 Tbsp Date Syrup
  • 1 Tsp Cinnamon

Pitaya Cream:

  • 1/2 Cup Coconut Mylk
  • 2 Tbsp Coconut Mylk Powder
  • 1/2 Tbsp Maple Syrup
  • 1 Tsp Pink Pitaya Powder



  • Blend all ingredients together
  • Heat a non-stick or greased pan
  • Lower heat to medium low
  • Pour 3 Tbsp of batter into the pan
  • Flip the pancake once it begins to bubble
  • Remove pancake from heat
  • Repeat 🙂

Pink Pitaya Cream:

  • In a small bowl whip together coconut mylk and coconut mylk powder
  • Add in maple syrup
  • Add in pink pitaya
